Bernd’s grandma was a good cook – and was also the inspiration for Bernd’s cooking career (it certainly didn’t come from his mother, who had four hungry children to feed and very little time, although Alison has to admit her mother-in-law’s hazelnut cake is probably the best on the planet). In winter she used to make this wonderfully warming and tasty potato soup. It didn’t always come with the vegetable and herb trimmings but the basic soup was always the same. This is a great soup to make a big batch of, enjoy some for lunch and then put the rest in the freezer for when you are having one of those lazy, no-cook days and need something nourishing and quick.
