The calm before the storm

There is probably about half an hour before our guests arrive. Of calm before the storm. The food has been prepared to the point of „ab Abruf“ (no idea how to translate that – basically it is the point at which the order for the food is called out). The bottles have all been opened and pre-tasted and are waiting in the wings at the right temperature. The work surfaces have been wiped down and the last pots washed. The final touches have been made to the table. These thirty minutes are precious. A time to rest the feet and collect the thoughts. And then, wham, our guests arrive, the adrenalin flows and we are in entertainment mode for the evening. Don’t get me wrong. We love what we do. But that half hour is special.
